Honey Bars

In an odd twist of events, Saturday night is Team Tiara's Sponsor Appreciation Event.  Should be quite interesting!

Today I'm busy in the kitchen whipping up a few treats for friends and family who have given us amazing support.  And it appears I promised to Pin a few things.  So.....  Up first.....

Rene Stewart’s Honey Bars

2 cups flour
1 cup sugar
1 tsp. soda
1 ½ tsp. cinnamon
½ tsp. salt
¾ cup oil
¼-1/3 cup honey
1 egg, beaten
1 cup chopped nuts

Combine and blend dry ingredients. Add oil and honey and mix. Add egg and nuts and mix. Pour into greased 10 x 15 jelly roll pan and pat into corners and sides. Bake at 350 for 18 minutes.

Icing:
1 cup powdered sugar
1 T. water
2 T. mayonnaise
1 tsp. vanilla

Spread mixture over bars while still warm. Let set until almost cool. Cut into squares.

Rene was a dear friend from my days in Aggieland.  And this recipe always makes me think of her. We lost Rene in a car wreck in 1996.  She's missed.

Enjoy!!!
